Ice lollies (dairy-free)

These Ice lollies are from Ella Woodward's blog and cookery book ("Deliciously Ella') and are perfect for a hot summer's day....

I like the fact that there is no added sugar or 'nasties' in them which makes them perfect for children (and adults alike!).

Ingredients:

Makes 2 of each flavour (6 lollies in total)

Chocolate:

  • 2 Medjool dates
  • 2 ripe bananas
  • 1 heaped teaspoon of raw cacao powder (or cocoa powder)
  • 2 tablespoons of coconut milk

Strawberry:

  • 2 Medjool dates
  • 1 ripe banana
  • 1 mug of strawberries (200g)
  • 2 tablespoons of coconut milk

Banana Cinnamon:

  • 2 Medjool dates
  • 2 ripe bananas
  • 1 tsp ground cinnamon
  • 2 tablespoons of coconut milk

Method:

Simply remove the stones from the dates and peel the bananas.  Then place the ingredients for your chosen flavour into a blender with 2 tablespoons of water and blend for a minute until smooth.

Pour into an ice lolly mould (preferably BPA-free) and freeze, doing the same for each flavour.  To make mixed ones, simply pour half of one flavour into a mould and allow it to freeze for an hour, then top the mould up with the second flavour.

The lollies need to freeze for about 5 hours before they are ready to be enjoyed!

Top tip: try switching up the ingredients in these.  Always keep the coconut milk and water as your base, but then try adding things like mango and pineapple or cherry for new flavours.

Use full fat coconut milk for the best results.
