Gluten-free banana bread

This makes a great after-school snack for children and a healthier alternative to sugary options.  It is delicious spread with nut butter and is lovely as an afternoon pick-me-up with a cup of green or herbal tea.

Serves: 6-8

Ingredients:

4 eggs
3 medium overly ripe bananas, mashed
1/4 cup honey (or less to taste)
1/4 cup coconut milk
1 tbsp vanilla extract
2 tsp bicarbonate of soda
2 1/4 cups ground almonds
pinch of sea salt
1/2 tsp cinnamon

Method:

1. Preheat oven to 180  / Gas mark 4  

2. In a bowl, mix eggs, banana, honey, coconut milk, and vanilla.   

3. In a separate bowl, combine the remaining ingredients.

4. Combine both mixtures and stir until well incorporated.

5. Grease a bread pan and pour in batter. Bake for 35-50 minutes

6. Leave to cool in the tin and turn out.  Store in an airtight container
